When guests at The Three Chimneys raise a glass of our house sparkling wine, Langham’s Corallian Classic Cuvée, they often comment on its elegance, its freshness, its quiet complexity. What they may not know is just how much care, patience, and craftsmanship lie behind that first sip.

Earlier this year, in January 2026, our Restaurant Manager, Abigail MacLean, travelled to Dorset to visit Langham Wine Estate in person. What she found there deepened her admiration for the wine and the people who make it.

A Vineyard Rooted in Patience and Precision

Langham is not a large estate, nor does it try to be. Its strength lies in its focus, traditional methods, meticulous attention to detail, and a deep respect for the land. As Abigail walked through the vineyards and into the cellar, she was struck by the harmony between old world technique and modern English ambition.

The estate’s name for our house pour Corallian comes from the ancient limestone soils that define the site. This chalk rich layer, formed millions of years ago, gives the wine its signature mineral tension and purity. It’s a reminder that great wine begins long before fermentation, it begins in the earth.

Inside the Cellar: Time as an Ingredient

Langham’s approach to sparkling wine is rooted in the traditional Champagne method, but with a distinctly English sensibility. The wines are allowed the time they need, not rushed, not pushed to develop texture, depth, and balance.

Extended lees ageing brings subtle brioche and toasted pastry notes. Gentle handling preserves freshness. Every decision is made with intention.

Abigail left the cellar with a renewed appreciation for the patience behind each bottle.
