A Spirit Shaped by Skye
There is a particular alchemy to the Isle of Skye, the shifting light over Loch Dunvegan, the scent of gorse carried on the wind, the quiet meeting of sea and land. It is this sense of place, this unmistakable Skye character, that inspired us to create something truly our own.
Crafted in collaboration with North Point Distillery and distilled in a custom built 220 litre still affectionately named Audrey, this small batch Old Tom gin captures the island and Three Chimneys in both flavour and feeling. With only 240 bottles produced, it is a spirit made with intention, patience, and deep respect for provenance.
North Point Distillery
Based in Caithness one of the UK’s most northerly distilleries this spirit represents a meeting of two remote Highland coastlines. Lead by Thomas Russell at Three Chimneys and Alex MacDonald at the distillery who crafted a gin that reflects our shared values of authenticity, sustainability, and deep respect for provenance.
Distilled in a custom built 220 litre still named Audrey, created especially for this project, the gin is produced in a small batch of just 240 bottles. It is an Old Tom style gin (40% ABV), offering a rounded, gently sweet profile that complements the flavours of our island home.
The distillery is housed in a former US Navy building from the Cold War and its whisky cellar is an old bomb shelter.
Canadian-born Alex MacDonald is Founder and Co-CEO of North Point Distillery, which is based at Forss, near Thurso in Caithness. A graduate of the University of St. Andrews with a BSc in Business and a passion for spirits, Alex has years of experience growing start ups and young businesses.
The Botanicals
The Three Chimneys Gin begins with a traditional base of juniper, angelica root, coriander, and orris the timeless botanicals that anchor many great gins. These are enriched with cassia, pink peppercorn, orange, and chamomile, adding warmth, spice, and aromatic lift.
But it is the hero botanicals that define the spirit and root it firmly in its Highland origins:
Wild gorse, offering soft coconut sweetness
Douglas fir needles, bright and resinous
Scottish ale malted barley, adding depth and richness
Kelp, bringing subtle coastal salinity
Fresh orange and grapefruit peel, for vibrant citrus clarity
A final infusion of honey and marmalade rounds the profile, giving the gin its smooth, lightly sweet Old Tom character.
The Signature Serve - The Marmalade Martini
To celebrate the launch, our bar team has created the Marmalade Martini, a refined, citrus forward cocktail made entirely with British spirits. It brings together the Three Chimneys Gin, Triple Sec from Atlantic Distillery, Dry vermouth from Bramley & Gage, Orange bitters and a spoon of our own house made Three Chimneys marmalade.
Bright, elegant, and unmistakably Three Chimneys, it is the perfect expression of our new spirit.
